Putea Dei Pini Soli
Magliano is an ancient country village set in the bountiful Valle della Cupa on its way to Lecce that leads to the Ioanian coast, to the crystal clear sea and to the golden beaches of Porto Cesareo. On the outskirts of this small centre, immersed in the greenery of the countryside with its garden, the citrus groves, the vineyard and the olive groves, the Putea of the Pini Soli brings back to life the atmosphere, the customs and food of the traditional osterias from Salento, the putee, typical places where people used to gather around a bottle of wine and a typical local dish. The premises include the restored farmhouse and some new buildings that lodge three independent bedrooms, overlooking the patio and the citrus grove, providing a large bathroom and heating system. The renewals have preserved the original features of the country house both inside and outside, the furnishing is that typical from the Salento traditions including some pieces of antique furniture and design items. The cuisine at the Putea dei Pini Soli is based on the local seasonal products and is characterized by simple recipes typical of the daily country food: garden vegetables and wild plants, the pitte, the muersi, maritati and sagne with strong flavoured ricotta cheese, the tria, purpette, pezzetti, the stockfish with potatoes, almond biscuits to be doused into the moscato sweet wine, the sheep milk ricotta cheese prepared as a pudding….besides this wide and variegated choice of dishes there are also some seasonal recipes, prepared only in certain periods or on special days (lu cottu, the quince jelly, the pittule, the purceddhuzzi) and also some rare intrusion of international flavours such as a cous- cous dressed with a carrot sauce, or the Greek Mussaka or the polenta that melts the salami from Mantua or the sfogliatine from Villafranca.
